We're proud to brew delicious specialty coffee beans from Fazenda Cachoeira da Grama, in Brazil. This farm is recognized for its sustainable environmental and social practices and exceptional dedication and care during all the phases of coffee production. Fazenda Cachoeira da Grama has won multiple Cup of Excellence awards and dozens of national and local coffee competitions over the years.

Our coffee beans are sourced directly from the farm and freshly roasted locally in Ontario.​​​ ​We look forward to brewing you a special cup of coffee!

Fazenda Cachoeira da Grama, Brazil

Fazenda Cachoeira da Grama coffee farm has been in the Carvalho Dias family since 1890. The name Cachoeira da Grama is from a beautiful waterfall ("cachoeira") that is located inside the farm.​ Gabriel de Carvalho Dias is responsible for the property management.

Social and environmental sustainability are considered very important in the farm management. They have developed a program of planting native species to keep a better ecological balance. The wastewater is treated to avoid polluting the stream that runs across the farm.

 

The farm has a Rain Forest Alliance certification, ensuring that it meets strict requirements designed to improve farmers incomes and well-being while protecting the land.​ There are 47 houses for the employees and their families, all with modern facilities. The farm also has a school, a club and an official size soccer field for the employees benefit.

Grass Valley Region (Vale da Grama), Brazil

​The Grass Valley region (Vale da Grama) is a natural haven for coffee cultivation. The farm is located 3 miles from Minas Gerais state line and has characteristics from the mountainous areas of Mogiana and Sul de Minas.

 

The farm is nestled at high altitudes of 1,100m to 1,250m, and the area experiences average temperature of 19ºC. With well-distributed rainfall throughout the year, it has an excellent environment for coffee trees to flourish. The mineral-rich volcanic soil, characteristic of this region, provides the perfect nourishment that coffee plants require. Furthermore, the unique topography of the Grass Valley ensures natural shade for the coffee cherries, allowing them to ripen slowly. This slow maturation enhances the beans' flavour profile, contributing to their richness and complexity.

how the coffee is produced & awards

In this farm, everything is done manually since it's topography doesn't allow any kind of mechanization.

 

  • Coffee is planted and picked manually with a cloth on the ground, avoiding the bean to have direct contact with the soil.

  • Coffee processing is done quickly to avoid any kind of fermentation, it is transferred directly from the field to the wet mill where the green and mature beans are separated from the dry ones.

  • The beans go to the patio to be dried and the mature are pulped and separated from the green.

  • ​The pulped coffee is dried on suspended beds and covered patios until the bean reaches 20% of moisture.

  • The next step is to use driers to reduce the moisture to 11%.

  • The lots are then deposited in a warehouse with controlled level of moisture and free from odours to preserve the best quality.

Coffee produced at Fazenda Cachoeira da Grama is a result of dedication and care during all the phases, from the selection of seedlings, plantation, until harvest and processing.

 

The farm produces the Bourbon coffee variety, famous for it's exceptional quality. It's one of the most culturally and genetically important Arabica coffee varieties in the world.
